Description


Wild Rice (Zizania Aquatica) is not really rice--it is a seed from an aquatic grass. Wild Rice was important to the survival of many tribes in the upper midwest. The harsh winters of Minnesota made hunting and fishing difficult and Wild Rice was often the subsistence food for entire tribes. This rice is dark brown to black in color. There are 2 preferred doneness to wild rice. In the southern origins, local tribes preferred to cook the rice until it blossomed like popcorn. The rice was then strained and served. In the north, the rice was cooked just until it had a softened bite, but before it blossomed. The rice was then strained, and then served.
