The Italians are horrified by our usage of this, the world's most famous hard cheese. Here in the States, it is thought of as purely a grating cheese. The rest of the world savours Parmigiano Reggiano as a delicious, full-flavored eating cheese. It began life seven centuries ago in the Italian provinces of Parma, Reggio Emilia, Modena, part of Bologna and part of Mantua. Nature blessed this zone with the most idealistic cattle grazing land to create the unique milk from the "Zone Tripica". The local cheese craftsmen took it from there, utilizing a totally natural process that has not changed for 700 years. No additives, no machinery, no gimmicks. Just sweet, fresh milk in its pristine state; the artisan's ancient skills and then nature's own good time (aged from 18 to 20 months). What you see today is just what the knights, serfs, saints and kings of old ate!

Inconsistent quality

I ordered a Spanish cheese selection with a 1/2 pound portion of this vendor's Strevecchia (spelling?) Parmigiano Reggiano. I was able to sample the prodects sent and they were acceptable, for the most part. However, the Parmigiano Reggiano, at $25 a pound, was disappointing. It was largely rind and while the edible portion of the wedge was very good, I think I deserved better for the dear price. Suggestion: Go to Sam's club and get PR there for lots less. Their PR is very good indeed and you can see what you're getting. the PR I ordered was like what I used to buy in Cambridge when I lived in the UK in the late 1990s. it is aged about three years. The standard PR offered here is not aged nearly as long and it does make a difference. There is no bad PR- it's all wonderful, but some is just more wonderful. If you aren't going for the more aged PRs, you're just as well off with a less costly Grana Padano, made the same way but not aged as long, and not name controlled as is Parmigianno Reggiano. The Big Cheese

From Parma,Italy comes two famous food products.

Parmigiano Reggiano and prosciutto (which translates into something like dried meat.If you're ever in Bologna,I'd recommend a stop at Tamburini, which has stood in its place for as long as I can remember.

This cheese is worth every cent.

When you buy it, don't have it ground at the store, buy the block and grate it at home or it will lose it's strength of flavor.

I recommend this with a 100% guarantee of falling in love with the product, so buy it for St. Valentine's Day if you're single.
